Latkes, Eastern European in origin, are a pancake-like construction made from potatoes, onions, eggs, and matzoh meal. Latkes are not to be confused with anything the House of Pancakes would have on the menu. They are typically eaten with apple sauce, but never with maple syrup. If eaten on the first night of Hanukkah, most people will be celebrating heartburn for 8 days and nights.

The sweet potatoes used in this recipe are a Christmas tradition and are naturally nutritious until ruined by overly zealous advocates of sickly sweet preparations. Our Chrismukkah latkes are a nice compromise alternative to Aunt Dorothy’s marshmallow-studded casseroles. Served with cranberry apple compote, this dish should satisfy both sides of the Chrismukkah.
